Amazing Pumpkin Muffins



I tried a new recipe today and the whole family LOVED it!  While it is fall, it is best to take advantage of the flavors of the season.  So today I tried pumpkin muffins and pumpkin bread.  It was very delicious, and I got the original recipe here at The Preacher's Wife blog.  Of course I had to alter it slightly, since I always seem to start a recipe and realize halfway through I don't have all the ingredients.  Ha ha, oh well it always works out....well usually, my husband may say otherwise :)  Quite simple, quick to throw together and really is VERY good.

  • 3 1/3 cup all purpose flour
  • 3 cups sugar
  • 2 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1 1/2 tsp salt
  • 1 tsp nutmeg
  • 2/3 cup water
  • 1 stick of butter, melted
  • 1/2 cup coconut oil, melted
  • 3 eggs
  • 1 (15 oz) can pumpkin
Pre-heat oven to 350 degrees.  Mix all ingredients together in a large bowl.  Grease two 9 x 5 inch loaf pans, and line a cupcake tin with 9 liners.  Pour mixture in equal amounts into the loaf pans (filled about half way up), and pour what remains into the cupcake liners.  Place all pans in oven, pull muffins out at 25-30 minutes, and remove bread between 50-60 minutes, when an inserted tooth pick comes out clean.  Enjoy warm! Makes 2 loaves, and about 6-9 muffins
