Garlic Smashed Potatoes


I got the basic recipe for this from another recipe club.  A friend from church, Cori, brought the first version I had of this, called crash hot potatoes.  I just varied the recipe slightly to our tastes.  These are some of the best potatoes I have ever had, and a fun change from mashed or baked potatoes.

Ingredients:

2 small red potatoes (or 1 medium) for each person, and a few extra
Coconut oil
Salt
Pepper
Garlic cloves

Rinse potatoes, do NOT peel.  Boil them whole until fork tender (about 20-30 min).  Melt about 4 tablespoons of coconut oil.  Pour in "puddles" on a baking sheet.  Place one potato in the middle of each puddle.  Smash each potato down with a potato masher.  Melt about 1/4 cup coconut oil, drizzle about a tablespoon of oil over each mashed potato, sprinkle with salt & pepper.  Last, sprinkle each potato with 1/2 or one whole minced garlic clove.  Bake in the oven at 450 degrees, on the bottom rack for about 20 minutes, or until starting to brown.  Serve warm.
