Double Veggie Meatballs



My kids are always willing to eat meatballs, so I thought I would try to sneak in a few extra veggies...and they had no idea!  


Ingredients:
1/4 cup onions
1 cup fresh spinach
10 baby carrots
1/2 cup parmesan cheese
1 lb ground beef (or turkey whichever you prefer)
1 egg
1/4 teaspoon of salt
1/4 teaspoon of pepper
sprinkle of garlic powder

Add the onions, spinach and carrots to a food processor, pulse until finely chopped.  Add the rest of the ingredients and pulse until thoroughly combined.  Form into 1 inch balls, bake for 10-15 minutes until lightly browned. Serve warm and enjoy!

    1. Hahaha! You are funny Heidi, I was describing you to someone today and I said "she's kinda like me except way funnier!" If I lived closer I would totally double up on dinners and give you a break some nights....and maybe Emilia could bake me cookies in exchange!!
